Grilled Tilapia and Cauliflower Rice
What’s for dinner tonight?
Cauliflower Rice
4 T olive oil
1 c celery, finely diced
1 c carrots, finely diced
1 head cauliflower, coarsely chopped
¼ t. celtic sea salt
4 cloves garlic
Sea Seasonings w/Kelp
Saute onion in olive oil for 10 min, add celery and garlic and sauté for 5 min. Put cauliflower in food processor and process until texture of rice. Add cauliflower to skillet, cover and cook for 5 – 10 min, then season.
Grilled Tilapia
2-4 T coconut oil
1 lb wild-caught Tilapia (frozen)
salt & seasonings
Start grill and set on high. Drizzle coconut oil over bottom of foil. Place frozen fish on the foil sprinkle with the Celtic Sea Salt and seasonings. Drizzle more coconut oil on top of the fish. Place on the grill on high for approximately 10-15 min minutes. Less if not frozen.
